Chocolate Covered Crispy Peanut Butter Balls Recipe

Everyone loves these bite sized treats and they are so easy to make. Whether you’re making these for the holidays, a birthday party or just as a treat, these will be a guaranteed hit! You can use store bought Rice Krispies (puffed rice) or check out our video on how to make your own. When it comes time to dipping the peanut butter balls in chocolate, you can either melt 1 cup of chocolate chips, chunks or melts with 1 Tbsp of shortening or make your own as I did in this video.

Equipment

  • 1 set measuring cups and spoons
  • 1 medium bowl
  • 1 small pot *to melt coconut oil
  • 1 tray lined with parchment paper
  • tooth picks

Ingredients
  

For Balls

  • 1 cup peanut butter
  • ¼ cup butter (softened)
  • 2 cups confectionary sugar
  • 1 cup puffed rice

For Chocolate Coating (Optional coating in Notes Section)

  • ½ cup confectionary sugar
  • ½ cup cocoa powder
  • ½ cup coconut oil melted

Instructions
 

  • Combine peanut butter with softened butter until well blended
  • Slowly add in confectionary sugar a little at a time until completely blended forming a soft dough
  • Form dough into 1 inch balls
  • Place balls on a parchment lined tray and stick a toothpick into the top of each ball
  • Cool balls in the freezer for 30 to 45 minutes or until firm
  • When balls are cooled, make your chocolate for dipping the balls by combining the cocoa, confectionary sugar and melted coconut oil together until smooth with no lumps
  • Remove balls from freezer and dip by the toothpick into the chocolate mixture until fully coated; placing coated balls back onto the lined tray
  • Once all balls are chocolate coated and on the tray. Put the tray back into the freezer for 15 to 30 minutes until chocolate has hardened.
  • Store in the refrigerator as this chocolate has a low melting point. For a harder chocolate coating option, see the notes section

Notes

For a harder chocolate coating, in a double boiler, you can use a mixture of 1 cup chocolate chips with 1 Tbsp of Shortening, melted together and stirred until fully combined and dip the peanut butter balls.  This will harden quickly in the pan so you will need to work quickly or move the chocolate back to the stove to re-soften.
