Homemade Ice Cream Without Heavy Cream
This is a tried and true recipe that doesn't require a heavy or whipping cream to make but still has a smooth creamy consistency that definitely takes care of that ice cream craving.

Ingredients

evaporated milk
(13 ounces)
1 1/4

confectionary sugar / powdered sugar

can
sweetened condensed milk
(14 ounces)

vanilla extract

Instructions
Chill the evaporated milk in the refrigerator until it is very cold (preferably for a few days).
Whip the cold evaporated milk in a large mixing bowl with an electric mixer on high speed until it becomes fluffy and forms soft peaks.
Gradually add the powdered sugar in thirds, whipping well after each addition to combine.
Stir in the sweetened condensed milk, vanilla extract and salt (if using). Mix well until the mixture is uniform.
Freeze the mixture in an airtight container for at least 6 hours or overnight until firm.

Notes
You can add fruit to this ice cream after it has been in the freezer for about two hours, just mix it in and put it back in the freezer.
