This bread is a great option for the abundance of green tomatoes I end up with every fall when frost is about to descend on my gardens. If you've made all the relish, pickled tomatoes, fried green tomatoes and green tomato salsa that you need, this is another great use for even the small green tomatoes that would normally get tossed to the chickens, in the compost or in the trash. We love baking and eating this for breakfast or as a quick snack but you can also freeze the slices, entire loaves or even the diced tomatoes for use later.
