Green Tomato Bread

This is a great fall option for a sweet bread using the last of your green tomatoes when frost is on its way. You can make and freeze the bread or freeze the processed tomatoes to make your bread throughout the winter months. With a taste similar to a banana or zucchini bread, it's a family favorite using ingredients that you might otherwise throw away.

Servings 10 slices per loaf/makes 2 loaves

Equipment

  • 1 food processor, chopper
  • 2 9x5 bread loaf pans

Ingredients
  

  • 2 cups finely diced green tomatoes
  • 1 tbsp vanilla extract
  • 2 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 3 cups flour
  • 1 tsp salt
  • 1 tbsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • butter, margarine or shortening used for greasing pans
  • flour for flouring greased pans

Instructions
 

  • Preheat oven to 350 degrees (f)
  • Grease and flour two (2) 9x5 loaf pans
  • In large bowl, combine tomato, vanilla, eggs and vegetable oil. Stir until combined. Add sugar and stir until sugar is completely mixed into liquid batter.
  • Measure 3 cups of flour and add the salt, cinnamon, baking soda and baking powder. Stir until thoroughly mixed before adding to wet mixture.
  • Stir dry ingredients into wet ingredients until thoroughly mixed. Divide batter evenly into the two greased and floured bread pans.
  • Put into preheated 350 degree(f) oven for one hour. You may want to give the pans a halfway spin at about 30 minutes to ensure they are baking evenly.
  • After one hour, test with a toothpick and if it comes out clean, remove breads from oven and place pans on rack to cool for 15 minutes or so before attempting to remove from pans.

This bread is a great option for the abundance of green tomatoes I end up with every fall when frost is about to descend on my gardens.  If you've made all the relish, pickled tomatoes, fried green tomatoes and green tomato salsa that you need, this is another great use for even the small green tomatoes that would normally get tossed to the chickens, in the compost or in the trash.  We love baking and eating this for breakfast or as a quick snack but you can also freeze the slices, entire loaves or even the diced tomatoes for use later.  We hope you love this sweet treat as much as we do and remember, every bit counts!
