
Double Chocolate Zucchini Brownies
If you have a garden full of zucchini or are just looking for an amazing brownie recipe, this is for you! We make lots of different recipes with zucchini but this sweet treat is a great way to get the kids to put a little more veggies in their diet and is delicious! With no eggs, butter or milk this can be enjoyed by everyone whether your vegan, vegetarian or just a lover of brownies.
Equipment
- 1 large mixing bowl
- 1 set measuring cups and spoons
- 1 mixing spoon
- 1 paring knife
- 1 shredder or food processer *for shredding zucchini
- 1 9 x 13 pan greased or lined with parchment paper
Ingredients
- 3 cups shredded zucchini - NOT DRAINED
- ½ cup vegetable oil
- 1½ cup sugar
- 1 tbsp vanilla extract
- 2 cups all purpose flour (not sifted)
- ½ cup cocoa powder
- 1½ tsp baking soda
- 1 tsp salt
- 1 to 2 cups chocolate chips *can substitute with peanut butter chips
- ½ cups chopped walnuts is optional
Instructions
- Pre heat oven to 350℉ (177℃)
- Wash zucchini and finely shred until you have 3 cups pack zucchini - keep all juices
- In a large bowl, combine oil, sugar and vanilla extract until well blended
- Add flour, cocoa powder, baking soda and salt and mix well, your mix will be very dry
- Fold in zucchini with any juices and your mix will begin to moisten. Let sit for 5 minutes if necessary to allow it to completely moisten your mix.
- Add in chocolate chips and nuts if desired until well blended
- Pour mix into greased or lined pan and spread evenly
- Bake in preheated oven for 25 to 35 minutes, checking with a tooth pick in the center until it comes out clean
- Remove from oven and let cook about 20 minutes or longer before cutting

Important Note - Do not drain the zucchini as the liquid from the shredded zucchini is needed to moisten your mix.
