
Shortbread Cookies - Easy 3 Ingredient Recipe
Shortbread cookies have been a favorite in our household for generations. Paired with a hot cup of tea or coffee, these simple cookies bring back memories of quiet moments cuddled under a blanket by the fire. If these were purchased at the store, which was rare, the tins were saved by Mom to hold buttons or used to hold your beloved collection of pretty rocks, bottle caps or other trinkets. Being able to create these delicious cookies with just a few simple ingredients you probably already have in your kitchen means you can enjoy shortbread cookies anytime. You can eat them plain, dip them in melted chocolate, sprinkle them with sugar or a variety of other options if you're looking to dress them up.
Equipment
- 1 medium bowl
- 1 set measuring cups and spoons
- 1 Rolling Pin
- 1 mixing spoon
- 1 Cutting Board optional
- 1 cookie or biscuit cutter
- 1 cookie sheet
- 1 cooling rack
- parchment paper or silicone mat
Ingredients
- ¾ cup softened butter
- ¼ cup granulated sugar
- 2 cups all purpose flour (not sifted)
Instructions
- Preheat oven to 350℉ (177℃)
- Soften butter in a medium bowl
- Add sugar and stir until thoroughly combined
- Add flour and stir until completely incorporated. This will take time as this is not a wet mix, more of a dough. If you do find your dough is too dry add a little more softened butter, one tablespoon at a time until dough holds together creating a ball. If your dough is too sticky, you can add flour, one tablespoon at a time until you can handle the dough and form it into a ball without it sticking to your fingers.
- Place finished dough ball onto parchment paper or a lightly floured surface and roll our with a rolling pin until about ½ inch thick. If the dough is sticking to the rolling pin you can either sprinkle lightly with flour or rub flour onto the rolling pin.
- Used desired cookie or biscuit cutter or pastry cutter to create desired shaped cookies, remove any excess dough and reshape, roll and cut into more cookies
- Place cookies on a cookie sheet either lined with parchment paper or a silicone mat to help keep the bottoms of the cookies from browning too much.
- Bake cookies for approximately 20 minutes in a preheated oven at 350℉ (177℃)
- After removing from oven, place cookies on a cooling rack and allow to cool thoroughly.
- Store in an air tight container with a lid.
