
Harvest Pumpkin Bread- Baking with Friendship Bread Starter
This recipe takes your plain Friendship Bread into a wonderful new direction! Whether you are making this with canned pumpkin puree, fresh fall pumpkins you've cooked yourself or pureed pumpkin from your freezer, this is a delicious, moist treat anytime of year. Great to make and eat, share or freeze for later, this bread won't disappoint with flavor. - 1 set measuring cups and spoons
- 1 large mixing bowl non-metal recommended
- 1 mixing spoon
- 2 loaf pans 9" x 5" pans
- cooling rack
Ingredients
Harvest Pumpkin Bread
- 1 cup Friendship Bread Starter
- 3 large eggs
- ½ cup oil
- ½ cup applesauce
- 2 cups pumpkin puree (or one 15 oz. can)
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1 Tbsp pumpkin pie spice
- 1½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
Cinnamon Sugar Topping
- ¼ cup granulated sugar
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 325℉
- Grease two 9x5 loaf pans. If using, dust the pan sides and bottoms with half the cinnamon-sugar mixture
- In a large bowl, whisk together : starter, eggs, oil, applesauce, pumpkin puree and sugar until thoroughly mixed
- Stir the dry ingredients into the wet until mixed.
- Pour batter into the prepared pans. If using, sprinkle the remaining cinnamon-sugar topping over the top of the batter.
- Bake for 60 to 70 minutes or until a toothpick inserted in the center comes out clean. Cool in the pans for 10 minutes before removing to a cooling rack.

Notes
Add-ins: Based on your tastes, you can add 1 cup of chopped walnuts, pecans, raisins or chocolate chips to the recipe when you add the dry ingredients.
This bread freezes very well. Wrap the cooled loaves tightly in plastic wrap or equivalent then in a layer of foil and they will stay fresh 3-6 months easily.
