Rhubarb Lemonade

Every year we grow more rhubarb than we can use and are always looking for new uses. If you like strawberry-rhubarb pie ,rhubarb sauce, and all things rhubarb, this drink will not disappoint!  Whether you drink this in the heat of summer or use the concentrated juice as a mixer, its refreshing, slightly tart taste is a winner.  So, sit back, relax and enjoy a cool drink of Rhubarb Lemonade this season with this easy to make recipe.

Equipment

  • 1 1/2 gallon jar or drink container
  • 1 Large Pot *if canning
  • 1 case pint sized jars and lids *if canning
  • 1 canning pot *if canning
  • 1 set canning tools(lid lifter, jar lifter, funnel, headspace tool) *if canning

Ingredients
  

  • 1 pint Rhubarb Juice *amount to vary if canning the juice
  • 3 pints water *omit if canning
  • 1/3 cup lemon juice *adjust to equivalent needed for pints of juice if canning
  • 1/2 cup sugar *adjust to equivalent needed for pints of juice if canning

Instructions
 

Instructions for Drink

  • Mix ingredients (including water) in 1/2 gallon container and stir until sweetener is thoroughly incorporated
  • Place in refrigerator to cool or server over ice

Instructions for Canning

  • Mix ingredients (excluding water) in appropriately sized pot, stirring until sweetener is thoroughly incorporated.-NOTE: not all sweeteners can well, do your research before substituting!
  • Put pot on stove and heat to 190 degrees Fahrenheit, remove from heat
  • Put into hot, pint-sized jars leaving ¼ inch head space
  • Clean rim of jar, place on lid and ring and put into hot water in canner
  • Bring to a boil and process for 10 minutes, shut off heat, leave jars in canner for 5 minutes
  • Remove jars from canner and place on surface away from cold drafts, allowing to cool for 24 hours before storing
  • * Always verify successful seal and label before storing canned goods
