Depression Era Three Ingredient Cake

Cake mixes came on the market in 1929. During the Great Depression having a mix on the shelf when you might not be able to get all the separate ingredients at the store was an option that made life a little easier. This three ingredient cake can be made with home-canned pie fillings or store bought fillings and can be made with different combinations of cake mixes and fillings. Let your creativity and tastes guide your choices to some amazing desserts. This recipe is specifically for the Pumpkin Spice Cake.

Equipment

  • 1 Bowl for mixing cake batter
  • 1 mixing spoon
  • 1 Bundt pan You can also use muffin tins or a 9x13 pan

Ingredients
  

  • 1 box cake mix -in this case spice cake You can use other mixes or make from scratch depending on your personal preference
  • 3 eggs
  • 1 15 oz pureed pumpkin You can use other fillings based on the mix you choose

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit
  • Grease pan (you can use shortening, butter or a spray
  • In bowl, combine cake mix, eggs and pureed pumpkin.
  • Stir ingredients until thoroughly mixed
  • Pour into your greased Bundt pan
  • Bake at 350 degrees Fahrenheit for 30-40 minutes
  • Let pan cool 5-10 minutes and remove from pan (turn pan upside down onto plate, tray or cooling rack)
  • Can be served warm or cool. Can top with confectionary sugar, glaze or cream cheese frosting.

The combinations are endless!  If you make your cake mix from scratch you can be creative with your flavors and combinations as well.
